I just finished stage 48 and I had a question about how easily the diff should turn. Once I put the bevel gear in place I noticed it had a little play so I looseded the cup joint and made sure it was tight up against the bearings and everything was flush. But now after putting the cover on, the diff is a bit stiff. It can still turn no problem, but it is nowhere as loose as it was. Is this ok? Or should I loosen things to the point where the diff is super easy to turn again? Or does this not make sense?

Its movement will be a little on the tight side until the gears bed in. Have you disassembled and re-assembled?

Yeah. I took it apart a couple times just to make sure there was no lateral movement of the bevel gear but I thubk I have it a little tight in there.
