Hi there, there isn't an in depth tutorial for planking the launch as such, other than that you see within the instructions. However, the instructions together with the official build diary will give you all the information you need to successfully plank the launch. Here is a link to the Official build area covering this task -

Tips I will give you is first of all be very careful in handling the frames for the launch, they are pretty delicate and easily broken. Secondly, the strips used to plank the launch are very thin, this makes them malleable and easy to bend plus you may like to consider using superglue gel for attaching the strips, many have used this method.
Produce a build diary showing your progress and post often, this way we can follow your progress and hopefully prevent any serious errors creeping in. If you're unsure of anything then ask, there is a vast amount of information on the forum together with very experienced modellers who are only to willing to assist.
Lastly, here is a link that outlines the basics of planking model ships.

You may find this interesting however, the instructions for the Victory are very precise and the best out there, taking you through the complete planking process step by step. Follow these and you should find you'll soon get into the swing of it.... In fact, it may just benefit you to start with planking the main ship first, get the hang of planking then move onto tackling the launch itself with a better understanding of what is required.
Hope this help and should you need any further info then just ask.....
Regards
Alan
