I am considering not using the display brackets from stage 106 as i think it'll look better on display without them. Will this create an issue due to the weight of the car or not?

You can't really see them when fitted.
I'm guessing they are for the overall weight as you say.
I'm just completing the Nissan Skyline and that also comes with support blocks.

You could keep them safe somewhere for the future if the car does begin to 'sink'.

I'd advise using them but of course it's up to you.
