Hi Dave,
I wouldn't Varnish them, too much risk of blocking up the holes, which is not good. I stained some of mine, by soaking them overnight in Dark Oak or similar, Rustins or Colron are OK. These are more of a dye. Don't use the thicker varnish types for the reasons above. However, it's about personal preference, I like darker blocks, but you can just leave them as is.

Hey dave, i had a similar issue, i didnt want any shiny wood so i went for a wood stain, goto HOMEBASE for £7.89 you can get a little pot of:
Ronseal Quick Drying WOODSTAIN - DARK OAK.

Im happy with the results, looks like they are genuinely solid hard wood that take alot of abuse from the canon itself.

if you are going to leave an item to soak in wood dye/stain make sure it is in a glass or metal container.
I left some gun carriages to soak overnight in a plastic container (not my usual one) and in the morning it had melted!
I had plastic coated carriages. Fortunately it was in my shed and I ended up with was a nicely stained workbench.
