Does anyone happen to have STL Files (for say the ears, hands or legs) to 3D print so I can customize my Robi?

I havent seen any .stl files for robi.it wouldnt be that hard to 3d model some though.

I have a 3D printer but I never created my own 3d models before. I would not even know where to begin. Do you have any idea what software I would use or even how I could model some of the parts for Robi?

There are lots of free 3d software design programs.A simple one in tinkercad.There are youtube tutorials that teach you the basics of 3d design.There is a bit of a learning curve but you should be able to make basic shapes very quickly.Once you have designed your own parts you can export them as .stl files which your printers software needs to generate the part.
